Peanut Butter Sugar Cookie Cups
Whoever decided to take peanuts and crush and blend them into peanut butter is a true gift to humanity. We thank that person because without their genius brain we wouldn't be able to make things like "Perfect" Peanut Butter Bars, Peanut Butter Lattes, peanut butter on a spoon or even these peanut butter sugar cookies!
You only need a few ingredients to make these cups and if you don't have a silicone mold then roll the dough filling into little little balls and dip them in chocolate! I use this cookie dough tray to make these cups.
3 Keto White Chocolate bars (7.5 oz)
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
Filling:
1/2 cup peanut butter
2 teaspoons vanilla
1 Tablespoon coconut flour
2 scoops collagen peptides
Melt white chocolate & add vanilla and almond extract. Pour a little in a silicone mold and spread it around. Place in fridge and make the peanut butter filling (mix peanut butter, vanilla, coconut flour and collagen). Scoop a little out and press into molds. Pour melted chocolate over the top to cover peanut butter filling. Place back in fridge until chocolate sets. Top with sprinkles.
Each cup has about 195 calories, 3g net carbs, 1.4g sugar and 6g protein (all depending on the brands you use) I didn’t add any sugar because the chocolate was sweet enough for me and peanut butter, in my opinion, doesn’t need sugar.
