Peanut Butter Latte (Simple Syrup) | 2 Ingredients (Gluten Free & Vegan)
Peanut butter in a latte? Coffee and peanut butter? Together? I can’t be serious. Oh, but I am, friend! Don’t knock it until you take a sip, fall in love and forever be frustrated that no coffee shop make PB lattes! HAH! Seriously, though, I was once like you. I once raised an eyebrow and smirked when I saw that it was a thing. I took it upon myself to try it, my friend. You know what? I took one for the team, and let’s just say that … grand slam, baby!
Okay, enough of me being super silly as I talk to you about my love of coffee and now this addition of smooth and creamy peanut butter. Let me start off by saying I did not invent this, but I did try it at a coffee shop a few years ago. I almost didn’t, because, like you, I thought it was weird. I decided to take one for the team (as I said above) and jokingly told the barista that if I hated it that I wanted to swap it for a regular cashew milk latte.
Fast forward to 2020 - the year of all strange and weird things happening. I randomly thought about making a PB Latte and, well, here we are. Trust me when I say that this delicious mixture is also great on toast, cookies, brownies, ice cream or whatever you want to add some sweet PB to.
This is very easy to make, and all you need is two simple ingredients: peanut butter and maple syrup. Boom. That’s it!
You MUST use extra creamy peanut butter. If the peanut butter has thick clumps of PB then your syrup will have clumps. Store simple syrup in the fridge in an airtight container for up to 2 weeks.

INGREDIENTS:
1/3 cup creamy peanut butter
1/3 cup + 2 TB maple syrup
Directions: Pour creamy peanut butter and maple syrup in a medium sauce pot over medium heat. Stir occasionally until it’s well combined.
Once the bubbles start to appear, turn off the heat and allow it to cool for about 5 minutes before pouring it into a glass jar. Be careful, as it will be very hot. Do not place in fridge until it’s room temperature.
Use it in a latte, on toast, with a banana, cookies, etc.
Peanut Butter Latte Directions:
However you make your coffee (whether it’s mushroom coffee, espresso or regular black coffee), place 1 TB of peanut butter simple syrup in your coffee, and stir or use a hand frother (like this one). Mix well. Add collagen (optional) and frothed dairy free milk of choice. (I use this big milk frother but you don't have to). Pour frothed milk over coffee and enjoy.
