One-Pot Cozy, Gluten-Free Taco Soup: Wholesome, comforting, & packed with flavor!

My grama Winnie made this for everyone that came to visit. If you ever were a guest at her home, chances are she made you taco soup. She made this at least once a week when I was growing up and it's delicious. My grampa’s favorite food was mexican food and boy this reminds me so much of being at their house and growing up in San Francisco. I tweaked it a little (I swapped corn for zucchini since I don’t eat corn) but the flavor is there and it's so nostalgic.
One-pot meals are a game-changer for busy families, making cooking and cleanup effortless while still delivering hearty, nourishing dishes with great ingredients. With everything simmering together in a single pot, flavors blend perfectly. Comforting meals with minimal effort + less dishes and cleanup make this meal even better.
INGREDIENTS
1 to 2 pounds ground beef
1 chopped onion, diced
1 zucchini, diced
1 - 28oz can diced tomatoes with juiced
1 - 14oz can kidney beans (optional)
1 - 8oz can tomato sauce
1 package taco seasoning (Siete Foods - Mild)
2 cups beef bone broth (Bonafide Provisions is our fav)
Salt and pepper to taste
Cheese & grain-free chips for garnish
Brown the beef with onions, add zucchini and the remaining ingredients (except for cheese and chips) and stir well. Cover and simmer for 20 minutes and serve with chips and cheese on top. Simple, flavorful and you’ll want seconds.
If you eat corn, add 1 can of corn (drained) or swap for zucchini or perhaps 1 cup of cauliflower rice.
