Delicious Monster Cookies | Gluten & Grain-Free + Dairy-free Option

Monster cookies are a delicious cookie that originally combines oats, chocolate chips and peanut butter making one of my favorite cookies ever. I decided to make them gluten free and grain free with a paleo option that you just can't say no to. My version of monster cookies are hearty and have amazing texture and flavor without ungodly amounts of sugar or yucky ingredients.

You will love this cookie recipe and keep coming back to it. I've even made it dairy free with an awesome clean dairy free butter or you can use regular butter instead. They are almost paleo… so i'd call them paleo-ish. (You could swap the peanut butter for almond butter and omit the peanut butter candy pieces to make them paleo.

INGREDIENTS

1/4 cup melted butter (regular or dairy free)

1/2 cup coconut sugar

1/4 cup maple syrup

1 Tablespoon vanilla

2 eggs

1/4 cup coconut flour

1/2 cup almond flour

1/2 cup chocolate chips

1 tsp baking soda

3 Tablespoons almond flour

3/4 cup toasted shredded coconut

1/2 cup hemp seeds

2 Tablespoons chia seeds

Directions - mix wet ingredients together then add in dry ingredients. Add in chocolate chips, roll into balls (about 2 TB size). Flatten cookies a little and top with peanut butter candy pieces. Bake at 350 for 15 minutes. Cool on a cooling rack and store in airtight container in the fridge… if there are any left.

I love Justin's! Their peanut butter candy pieces are out of this world. I don't normally eat cane sugar (and I pretty much avoid it) except for these tasty candy pieces which I love every now and then espeically on these Monster Cookies. I love that they are organic and made with natural colors, too.

For dairy free butter I prefer to use Monty's DF butter. It's by far the tastiest, cleanest dairy free butter on the market. They even have an incredible line of dairy-free cream cheese, too. I can't recomend Monty's enough!
