Chocolate Chip Strawberry Cookies - The Perfect Valentine Treat - Gluten-free, Grain-free & Dairy-free

If you love chocolate covered strawberries then you’ll love this special cookie I made for my loves for Valentine’s day. Don't sleep on this incredible combo. These cookies are gluten free, grain free, can be made dairy free, refined sugar free and 100% bomb diggity.


This isn’t your average chocolate chip cookie and the added strawberries really add something extra... a pizazz if you will, that Je ne sais quoi ya know, that you didn’t know you needed in a cookie. It's love at first bite. You can easily whip these up quicker than you can say stupid cupid, trust me. Make them tonight. These delicious cookies are made with organic ingredients like almond flour, flaxseed meal and grass fed butter and sweetened with coconut sugar. They can also be made dairy free, too -- see the note below. I used two kinds of chocolate because I'm extra and of course I used organic freeze dried strawberries. This valentines day, forget the overpriced mediocre chocolate covered strawberries and make a batch of these tasty cookies instead. You're welcome. Happy Valentine's Day.



 

INGREDIENTS


6 Tablespoons butter, soft or room temperature

3/4 cup coconut sugar

1 egg

1 Tablespoon vanilla extract

3/4 tsp baking soda

2 cups almond flour

1 Tablespoon flaxseed meal (optional)

Heaping 1/3 cup dark chocolate chips

Heaping 1/3 cup chocolate gems

1 bag freeze dried strawberries (about 1 ounce)

Topped with flaky sea salt (optional)


Preheat the oven to 350 degrees. Mix the butter, coconut sugar, egg and vanilla in a mixer or by hand in a bowl. Add the almond flour, flaxseed meal, and baking soda and mix. Add chocoalte gems (I used Hu Kitchen chocolate gems) and some chocolate chips (from Guittard) -- both are sweetened with coconut sugar. Lastly, lightly mix in the freeze dried strawberries and scoop out into 2 Tablespoon balls. Press them down a little and top with flaky sea salt if you like. Bake for 13-16 minutes until golden brown on the very outside. Leave them on the baking sheet for at least 10 minutes to allow them to firm up and also remain chewy. This is the longest 10 minutes of your life.
