Easy Cucumber Pico de Gallo Salsa Ever | Gluten Free, Whole30, Vegan

(updated photos 5/2020) I just returned from Mexico last week with my husband. We had the best vacation ever! We relaxed by the pool, got a nice tan and even swam with sea lions.


There were a handful of us on the trip that also volunteered a day at a wonderful organization called Entreamigos, which is a children's organization in San Pancho, Nayarit, Mexico. San Pancho is about 35 minutes from where we stayed in Nuevo Vallarta.

As a group we did everything from hard manual labor to intricate fabric cutting. It was hot, humid & very fun. One thing that we found absolutely amazing is that this place uses every material that they can in order to not waste a thing! 80% of everything in this community center is made from recycled goods of some kind. It puts things into perspective of how much we waste back home. We throw away a wrapper or carton, which is something that they would use for all kinds of things!

After working a few hours, the lovely people at Entreamigos prepared a tasty snack for us. These homemade tostadas were so good & the salsa was so amazing that I had to try to recreate it. I could have eaten the whole bowl! The photo above is of the tostadas they prepared for us; please note the banana leaf placemat - they make good use of everything!

This salsa is so easy to make. It has great crunch and a fresh flavor! You might be thinking - sure there are tons of salsa recipes out there, why this one? First of all, this salsa is special to our family now. It might sound simple, but we had an amazing time serving at Entreamigos, reflected on a lot and this salsa reminds us of Entreamigos. Second, they hand-prepared this tostada and salsa with lots of love for us to enjoy after working so hard for a few hours. We were exhausted, really sweaty and yet we all came to break "corn chip" (not bread, see what I did there?!) together. Third, this salsa is so amazing!

INGREDIENTS
1 large cucumber
2-3 tomatoes
1/2 yellow or white onion
1/4 cup cilantro
1 lime
sea salt if desired
Directions:
Cut cucumbers, tomatoes and onion into tiny pieces, and mix together in medium size bowl. Chop cilantro and add to mixture. Squeeze lime over mixture and stir. Add sea salt if you desire.
Eat with your favorite chips; we love Siete Foods grain free chips!
