Paleo Doughnuts with Maple Glaze! - (Simple Mills Vanilla Cake Mix)
Happy National Doughnut Day! I don't/can't eat regular doughnuts for so many reasons (ingredients, nutritional value, food allergies, empty calories etc.), but I still really wanted to participate in the celebration because doughnuts are delicious!
There is a doughnut shop around the corner, and I very well could have grabbed an old fashioned doughnut with chocolate frosting... but I said NO and had a better idea!
I have posted about Simple Mills Vanilla Cake Mix before - it's super tasty, paleo friendly, grain free, soy free and has no white or brown sugars, white flour, etc. (You can purchase this mix HERE)
The ingredients in this Vanilla Cake Mix are simple...
Almond flour Organic coconut sugar Arrowroot powder Organic coconut flour baking soda salt
and that's it! All you need is...
3 flax eggs (or 3 eggs) olive oil (or oil of choice) water vanilla
I followed the directions: mix wet ingredients in a bowl, add the baking mix and stir until completely combined.
Once batter is made, spray a doughnut pan (I used this one) and carefully pour batter into a ziplock bag. Cut the corner and pipe the batter into each doughnut mold about 3/4 full.
Bake for 10 minutes at 350 degrees.
Once doughnuts are completely cooled, then it's time for glaze them!
Make a batch of the "Caramel" Spread recipe and dunk the top of each doughnut in the spread. Add in 1/2 tsp of maple extract to the spread recipe for a delicious maple glaze!
Allow the "glaze" to harden by putting doughnuts on a tray or plate in the refrigerator for about 20 minutes. Enjoy!
Best to keep these doughnuts in the fridge.
