Strawberry Chia Seed Pudding (Tapioca)



Just in time for Valentine's day, I bring you a delicious twist on my original Chia Seed Pudding. It's basically tapioca pudding with fresh strawberries mixed in it.

If you have made my Chia Seed Pudding before, you know how easy it is to make and how hard it is to only eat a little at a time! This Valentine's Day, I wanted to make something different than the traditional "heart shaped" treats (there's nothing wrong with that, I just wanted to do something different), and decided to whip this up.

It will be delicious for breakfast on Valentine's Day morning, that's for sure! If there is any left over we will enjoy it for dessert, too.

__________ INGREDIENTS 1 cup Good Karma Flax Milk (Unsweetened Vanilla Protein +) 1/4 cup coconut cream (or full fat coconut milk) 1/4 cup Chia Seeds 2 TB maple syrup or honey 2 tsp vanilla

10 small strawberries or 5-6 large strawberries pinch of salt (optional) Directions: It's best to use tupperware that has a secure lid for this recipe. You can also double this recipe. Pour the Good Karma Flax Milk, coconut cream, maple syrup, vanilla and salt into your blender or VitaMix and blend until smooth. Then, add in about 6 of the strawberries and blend on high until smooth. Using the remaining 4 strawberries, put them in the blender and blend on medium so that the strawberries do not puree, but are chopped into tiny pieces. Taste the liquid mixture to see if you would like it sweeter. If so, add more maple syrup to taste.

Then, pour the mixture into a large tupperware with a lid and add the chia seeds. Whisk for about 30 seconds to 1 minute until all of the chia seeds are covered in the liquid.

Put the lid on and make sure it is secure, and place in the fridge for 20 minutes. After 20 minutes, remove the tupperware and whisk again for 30 seconds to 1 minute. Cover again and put it back into the fridge for 2 - 3 hours (whisking it often prevents the chia seeds from clumping). It will thicken up immensely during this time. Serve cold and enjoy it for dessert or even for breakfast. It is easy to make and extra tasty! You could top it with our favorite DANG Toasted Coconut Chips, or try it with a small scoop of jam, chocolate chips or whatever topping your heart desires!
