Simple Mills: Vanilla Cupcake Mix

This whole "no sugar" thing isn't that difficult when you have amazing companies like Simple Mills making ridiculously delicious mixes for your taste buds. There are only 6 ingredients in this mix. All of these ingredients can be pronounced and you know exactly what they are:
almond flour
organic coconut sugar
arrowroot powder
organic coconut flour
baking soda
salt
You will need add 4 other ingredients that makes 10 ingredients total for a cupcake mix:
eggs
olive oil
vanilla
water
I decided to look up another super popular cake mix to check out the ingredients. There are 19 ingredients and oddly, none of the ingredients are vanilla in their "Vanilla Cake Mix."
Enriched Flour Bleached (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid)
Sugar
Corn Syrup
Leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate).
Modified Corn Starch
Corn Starch
Partially Hydrogenated Soybean and/or Cottonseed Oil
Propylene Glycol Mono and Diesters of Fatty Acids
Salt
Distilled Monoglycerides
Dicalcium Phosphate
Natural and Artificial Flavor
Sodium Stearoyl Lactylate
Xanthan Gum
Cellulose Gum
Nonfat Milk.
Once you add in the following 3 ingredients, you have a 22 ingredient cake.

water
vegetable oil
Don't get me wrong, I do not think the quality of a cake is determined by the quantity of ingredients. However, when you can’t really pronounce the ingredients, nor can you understand why certain ingredients are in the cake mix, it’s a bit of a red flag.
Anyway, back to Simple Mills Vanilla Cake Mix. It’s made from almond flour so you know it’s low carb, plus - it's paleo, grain free, dairy free, soy free and way tasty. Of course, cake mixes are super easy to make if you follow the directions.
I really love this brand; so far I have made many of the items from their almond flour line, and each one has really been a hit at our house.
What you will need:
3 eggs
1/3 cup olive oil
1/3 cup water
1TBSP vanilla
Heat your oven to 350 degrees.
Whisk eggs, olive oil, water and vanilla in a large bowl.
Add your baking mix to the wet ingredients and stir until completely combined.
Pour your batter into lightly greased muffin tin about 2/3 full.
Bake for 15-20 minutes or until a toothpick comes out clean. Allow to cool before eating… if you can wait that long.
This wonderful Almond Flour mix sells for about $8 at Whole Foods and is worth every single penny. I highly recommend this mix and this entire line of products.
