Product: Namaste Foods Vanilla Cake Mix
One thing I've had a hard time finding over the past 6 or so years is a cake mix where I can acutally have all of the ingredients. Most mixes (even at health food stores) either have whole wheat flour, white sugar, corn starch or corn syrup, etc. I have loved Namaste Foods for alomst 6 years now and have been making their brownies and pizza crust mix over the years. Over the 4th of July, I decided to make a red, white and blue inspired dessert and decided to give their vanilla cake mix a try... boy, was it delicious!
When considering a menu to celebrate our Bagheera's 17th birthday, I wanted everything to be perfect... and, of course, vegan/vegetarian for my dad. It wasn't a tough decision to go with Namaste Foods Vanilla Cake Mix for this special occasion. I topped it with a rich and creamy, vegan chocolate buttercream frosting was definitely the "icing on the cake" if you know what I mean.
Not only is Namaste Foods such an amazing company with tasty foods, but the people who run the company are just wonderful & so sweet. I highly recommend any of their products to anyone, not just those who need allergy-friendly foods.
What You Will Need:
4 flax eggs * or 4 eggs
1/2 cup extra virgin olive oil
1 cup of water
1 package of Namaste Foods Vanilla Cake Mix
optional - 1 TB of vanilla extract
*(mix 3 tablespoons of warm water with 1 tablespoon of flax seed. Let it sit about 3 minutes until it forms a gel = 1 egg)
Start by preheating your oven to 350°F. Lightly spray or grease round pans or cupcake pans.
Next, combine 4 eggs, or 4 flax eggs (mix 3 tablespoons of warm water with 1 tablespoon of flax seed. Let it sit about 3 minutes until it forms a gel = 1 egg), 1 cup water and ½ cup extra virgin olive oil and the optional 1 TB of vanilla extract.
Add cake mix and mix or blend well.
If using cupcake pan, make sure that you fill the batter no more than 3/4 full and bake.
For rounds, fill evenly and bake.
Bake CUPCAKES for 20 - 25 minutes.
Bake ROUNDS for 25 - 32 minutes.
