Spaghetti "ZOODLES" With Meat Sauce
This recipe is one that I have made many times before. What inspired me to make this my next post was Disney. You might be thinking, "What does Disney have to do with spaghetti?" Well the answer is "A LOT!" Disney's beloved movie Lady and the Tramp celebrated 60 years, and we had a huge D23 Fanniversary with thousands and thousands of Disney fans! You might remember when they eat their spaghetti noodles romantically? Well, because hubby and I don't eat regular pasta, I decided to make zucchini noodles and meat sauce along with a side of cauliflower garlic bread! We wanted to participate in the huge celebration, too!
My husband licked his plate and went back for seconds. I hope you enjoy this easy-to-make, 'bowl-lickin" meat sauce and zucchini noodles!
__________
INGREDIENTS
3 zucchinis
1 lb of organic ground beef
1 14oz can tomato sauce
1 14oz can diced tomatoes / no salt
1/4 tsp white pepper
1/4 tsp sea salt
1 tsp oregano
1 bay leaf
dash of nutmeg - optional (when I mean DASH, I mean a small pinch)
Directions:
Brown your ground beef in 1 TB of extra virgin olive oil. Once it has browned and absorbed all it's own juices, add in your diced tomatoes and tomato sauce.
Mix well on medium or medium-low heat. Add in your spices (bay leaf, garlic powder, oregano) as well as the balsamic glaze (you can use balsamic vinegar but if you have the thicker stuff - use that!)
Cover on medium-low heat for 10 minutes.
While that's simmering, get out your VEGGETTI ( Purchase at Bed Bath & Beyond) and make your zucchini noodles.
Once the timer has beeped, toss in your zucchini noodles until fully coated in the meat sauce. We prefer that our zucchini noodles are a tad crunchy so I like to put the zucchini noodles in the meat sauce just until they are heated up and then serve it. If you want your zucchini noodles to be softer, just cook them in the meat sauce for a longer period of time.
