Garlic "Cauliflower" Bread
I don't have to really tell you again how much we really love garlic, but I will. WE LOVE GARLIC! And, who doesn't love garlic bread? Garlic bread is great with spaghetti, soup and even by it self, let's be honest. This recipe is pretty easy but a little time consuming I must say. It's worth every bite in the end!

INGREDIENTS:
1 small to medium head of cauliflower
1 1/4 cup mozzarella cheese
1/4 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp dried basil
1/4 tsp dried parsley
1/4 tsp sea salt
1/4 tsp white pepper (optional)
2 eggs
Topping
1/2 cup mozzarella cheese
6-10 cloves of raw garlic - diced
Directions:
Make cauliflower rice with your cauliflower. "Rice it up" in your food processor or VitaMix blender. For detailed instructions, see my cauliflower rice blog. Lay your riced cauliflower on a plate or cutting board and using a kitchen towerl and or paper towel press hard on your cauliflower to soak up the water. You should do this at least twice! Put riced cauliflower in a large mixing bowl and add your eggs, all dried herbs, salt and pepper and mozzarella cheese and mix well.
Prepare a large baking sheet with parchment paper and cooking spray and form cauliflower mixture into a flat pizza dough like rectangle.
Bake at 425 degrees for 15 minutes or untill the egdes start to brown.
Remove from oven and top with the mozzarella cheese and raw garlic. Place it back in the oven for 10 minutes or until cheese starts to get bubbly and starts browning.
Carefully cut into strips and serve.
Serve with Lentil Soup, Spaghetti "Zoodles" and Meat Sauce or even Bastiltops Pesto Red Lentil Pasta!
