Brown Rice & Quinoa with Greens & Garlic
I love mixing vegetables into my brown rice. It’s not that I feel I need to hide the greens or pretend they aren’t on my plate, I just like taking a bit of each thing on my plate at the same time. I also enjoy eating lots of vegetables with a little bit of rice as opposed to lots of rice with a little bit of vegetables. With that said, the other night, I was craving this amazing side dish that my dad bought for us from a restaurant in San Francisco. He told them to add garlic ('cause, well, you know, we love our garlic!) and spinach and once it was on our plate, it didn’t last very long. It was THAT good.
So, like I said, the other night I was craving that dish but didn’t even really remember what was in it besides brown rice, spinach and garlic, so I whipped this awesome dish up and a new recipe was born.
I always keep Seeds of Change's Organic Quinoa & Brown Rice with Garlic on hand so that at the last minute I can whip up something yummy for dinner without having to wait for rice or quinoa to cook. This yummy spinach & garlicy side dish is wonderful on its own or with a desired protein. We enjoyed it with some chicken the other night and my husband made sure that his plate was licked clean.

INGREDIENTS
4 large handfulls fresh spinach
1 TB extra virgin olive oil
1/2 cup of yellow onion
2-10 cloves garlic* chopped (whatever your garlic loving heart desires)
For Whole30 or Paleo, sub cauliflower rice for brown rice/quinoa.
*Let me remind you that my hubby and I eat a lot of garlic all of the time. If you enjoy garlic but don't want a whole lot of garlic in your dish or on your breath add 2 -3 cloves of garlic. If you LOVE garlic, perhaps had 6 - 10 cloves of garlic.... just know that we added about 10 cloves of garlic.
DIRECTIONS
Place 1 TB of olive oil in skillet on medium heat. Add all of your spinach and cover with a lid to allow the spinach to sweat and wilt. It should only take a few minutes
Next, add in your package of Seeds of Change Organic Quinoa & Brown Rice with Garlic - DO NOT MICROWAVE IT, just open the bag and pour it right in and stir it in with the spinach.
Once it is combined, add onions.
Then stir in your fresh garlic. If you like raw garlic, don’t cook very long, just stir it in long enough so that the garlic isn’t cold. You could stir it for about 2-3 minutes and then serve if you would like your garlic, cooked.
Serve alongside a protein or enjoy it by itself!
