Cilantro Lime & Avocado Sauce



This is wonderful and refreshing for your grilled or baked chicken, over veggies or even as a dip

for your potatoes. We normally eat it with brown rice, steamed broccoli and either baked chicken or use it on tacos!

Get out your blender, Vita Mix or food processor, throw in all the ingredients and then indulge!

INGREDIENTS

1 avocado (small/medium size)

3 TB of freshly squeezed lime juice

1/3 cup fresh cilantro (loosely packed)

2-3 TB of cashew cream (optional)

1/4 tsp sea salt

1 TB Extra Virgin Olive Oil

2-4 TB of cold water*

(You may want your sauce to be thicker or thinner than what I made. If you want it thinner, add more of the cold water. If you want it thicker, start with the 2 TB of water and increase as desired.)

Directions:

Put all of the ingredients into your food processor and blend until smooth.


Pour over your chicken, veggies or use as a dip.
